Ingredients
- 2 lbs potatoes, rinsed, peeled, and cubed
- ½ cup chicken broth
- ¼ cup plain rice milk
- ¼ cup safe margarine (optional)
- Up to 1 tsp salt
- ¼ tsp pepper
- Diced chives (optional)
Directions
- Boil potatoes in a large pot until fork tender. Drain water.
- In the same pot combine all ingredients together. Mash with potato masher or hand mixer to combine. Serve.
