Top 8 and Alpha Gal Friendly Mashed Potatoes

Ingredients

  • 2 lbs potatoes, rinsed, peeled, and cubed
  • ½ cup chicken broth
  • ¼ cup plain rice milk
  • ¼ cup safe margarine (optional)
  • Up to 1 tsp salt
  • ¼ tsp pepper
  • Diced chives (optional)

Directions

  1. Boil potatoes in a large pot until fork tender. Drain water.
  2. In the same pot combine all ingredients together. Mash with potato masher or hand mixer to combine. Serve.
